In this marvelously fragrant workshop, participants will help Chef Erin cook through an approachable Vietnamese menu, as we explore some of the flavorful building blocks of Vietnamese cuisine. Our agenda will include an introduction and demystification of fresh Asian herbs, fresh-toasting and grinding a five spice to perfume grilled chicken, and a demonstration of Erin’s “secret weapon” 5-6-7 sauce; encapsulating perhaps the most quintessential flavors of Vietnamese cooking. Class will conclude with a lunch of the dishes we have prepared together.

Flavors of Vietnam runs Saturday, July 18, from 10AM-1PM, taught by Ox-Bow’s head chef Erin Chapla, and costs $80. Art on the Meadow is a unique program, providing an intergenerational space for students to come together in the inspiring natural environment at Ox-Bow for half day, one day, or short term multi-day classes. Our workshops are geared toward teen and adult makers of all experience levels, age 13 and up. Art on the Meadow workshops offer participants an opportunity to connect traditional art and craft processes with contemporary ideas and approaches to artmaking. We strive for our workshops to be imaginatively challenging and logistically accessible for our West Michigan neighbors.
